Dear Dr. Dave and Dr. Dee,
We are sending out dinner invitations to many of our clients. The restaurant owner has requested that we inform them of dinner selections ahead of time because they will simultaneously serve regular dinner guests.
Is there an appropriate way to handle this? We have not had this issue in the past with other restaurants. How can we accommodate his request without being rude to our invitees?

Dear Business dinner question,
Restaurants normally need a head count, and if the dinner involves a choice of entrees, then the chef needs time to order and prepare the meals properly.
There are a couple of options available.
1) Do you really need two different entrees? For example, the difference between prime rib and lamb is not the same as the difference between prime rib and salmon. Therefore, you could just offer one entree such as prime rib.
2) If you really want the two different entrees (prime rib and lamb), then if you have not yet sent out the dinner invitations, add to the RSVP the entree selection.
Along with the RSVP, you can add something like the following:
Please indicate dinner preference:
Prime rib_________
Lamb____________
